OK, this is way fun and a great way to use up leftovers.
You can make YOUR very own SPRING ROLLS!
The spring rolls can be totally vegetarian or not. It's all up to you.
Let's start by gathering some ingredients.
You will need a package of spring roll wrappers (rice pancakes for spring rolls). These can be found in the Asian aisle at your grocery store. Next gather a bunch of whatever you got! I used salad, brocolli slaw and green peppers. Anything goes! Extra produce from your garden? Use it. Leftover shrimp? Use it! That's the whole point of having your own spring roll making bar. You know the kiddos will love putting theirs together! Just slice everything thinly.
Before you begin, individually place each spring roll wrapper into a pan of water for approximately 20 seconds. Remove the wrapper and lay onto a clean, wet towel. Now it is time to fill! Place all your ingredients into the center of the spring roll wrapper. Fold over the bottom and the sides, then roll. The spring roll package has visuals to help you with the rolling process. :)
Serve immediately with sweet and sour sauce for dipping.
