Shrimp Taco Bites

Shrimp Taco Bites!
Fastest, easiest appetizer on the planet!
Really?  Not as fast as opening chips and dip, but much prettier and fancier looking for sure.

Quick recipe, so lets make it a quick post and get right to it.

Adapted from I Wash You Dry
Ingredients:
24 large raw shrimp, peeled and tails remove
non-stick cooking spray
1/2 tsp salt
1 Tbsp lime juice
2 tsp chili powder
1/3 cup guacamole
1/3 cup sour cream
24 tortilla chip scoops

Preheat oven to 375 degrees.  Spray a cookie sheet with non-stick cooking spray.

Combine 1/2 tsp salt and chili powder in a small bowl. Sprinkle all over the raw shrimp. Lay the shrimp on the cookie sheet.  Sprinkle with lime juice.  Bake for 5-8 minutes or until the shrimps turn pink.

Assemble your shrimp taco bites by placing 1 tsp of guacamole in a tortilla chip, followed by a 1/2 tsp of sour cream, then top with a chili-lime shrimp.


What a great party appetizer that you can whip up just before the guests arrive.

Make your own guacamole or used a prepared one.  The sour cream and guacamole with the zesty lime flavored shrimp nestled in a tortilla scoop is nothing short of a party in your mouth!
