For those of you that have never heard of Portillo's Hot Dogs, they are the best place in the Chicago area to get a Chicago style dog. Dick Portillo started the hot dog company back in 1963 with nothing more than a small trailer. It has grown and is known as THE place to get a hot dog. Love their hot dogs, but I am truly in love with their chopped salad and HAVE the recipe!
Such a yummy summer salad and the dressing has a sweet honey mustard flavor that compliments every bite. It is truly addictive...follow along to see how to make it.
Ingredients:
1 head of iceberg lettuce
1 head Romaine lettuce
1 bag of chopped red cabbage
1 small red onion, finely chopped
1 bunch of green onions, chopped
3 tomatoes, seeded and chopped
2 cups cooked and cooled ditalini pasta
1 package bacon bits
1 cup crumbled gorgonzola cheese
Dressing Ingredients:
1/2 cup honey mustard dressing
1/4 cup olive oil
2 Tbsp honey
Wash and dry the lettuces. Chop the lettuce until it is in small pieces. Place in a large bowl.
Add remaining ingredients. Toss to combine.
Whisk together honey mustard dressing, olive oil and honey. Pour over the salad and mix. Serve immediately.
