Our farmer's market has opened!
I love to just wander among the tables to see what inspiration I can find for the evening's dinner.
So today all the produce inspired me to create
Farmer's Market Pizza with Balsamic Glaze
Ingredients for pizza:
1 medium size tomato
1 cup spinach
1/2 of a red onion
1 green pepper
1-2 Tbsp olive oil
1 tsp sea salt (or other coarse salt)
1 large artisan pizza crust
1/4 cup crumbled goat cheese
5-6 water packed fresh mozzarella balls, sliced
fresh basil and oregano spices
Ingredients for balsamic glaze:
1/2 cup balsamic vinegar
4 Tbsp brown sugar
Preheat oven to 375 degrees.
Coarsely chop tomato, spinach, red onion and green pepper. Toss vegetables with olive oil and sea salt.
Roast in 375 degree oven for 15 minutes.
Meanwhile make the balsamic glaze. In a medium saucepan, mix together balsamic vinegar and brown sugar. Heat over medium high heat until boiling. Reduce heat to low and cook until thickened for about 20 minutes.
Place the large pizza crust on a baking sheet. Top with the roasted vegetables. Drizzle 3 Tbsp of the balsamic glaze over the top of the vegetables. Sprinkle with goat cheese and fresh mozzarella slices. Add a little more sea salt or coarse salt.
Bake at 375 degrees for 15 minutes. Remove from oven and add some fresh basil and oregano.
Look at all those goodies!
The goat cheese and fresh mozzarella combined with the roasted veggies really makes your pizza gourmet!
Wander the aisles of your farmer's market and see what you can find. Make your own combo of veggies. Anything goes with the balsamic glaze.
