If you are looking for a change to your everyday pizza, you have got to give this one a try.
It's light and so refreshing...not something you usually say about pizza, right?
Lemon Arugula Pizza!
Sounds fancy and really hard to make...but it's not.
Modified from Two Peas and Their Pod
Ingredients:
1 large premade pizza crust or 4 smaller premade pizza crusts
1 Tbsp olive oil
1 container of fresh mozzarella, sliced
1/2 cup Parmesan cheese, shredded
2 cups arugula
2 Tbsp fresh lemon juice
Salt and pepper, to taste

Salt and pepper, to taste
Place your pizza on a cookie sheet or pizza stone. Spread the olive oil onto the pizza crust. Place the sliced fresh mozzarella on top and sprinkle on the Parmesan cheese. Bake in a 375 degree oven until the cheese melts and the crust is crispy. Remove from oven. Top with the arugula. Squeeze the 2 Tbsp of lemon juice on top. Sprinkle on salt and fresh ground pepper to taste.

This pizza is absolutely delicious!
The fresh mozzerella and Parmesan are cheesy good and then the light, lemon flavored arugula make the pizza taste incredibly fresh.
Just look...
You could make your own pizza crust, which I do once in awhile. But the store bought ones are pretty good and when you pair them with all of those fresh ingredients...yum, yum, yum! And super quick too!
