Finishing out my citrus kick with a family favorite.
When it is someone's birthday in our house, the birthday guy or gal is allowed to choose what they want for dinner. Chicken Limone is one of those favorites! The chicken is so flavorful and tender!!!

Ingredients:
4 chicken breasts
1 tsp salt
1/4 tsp pepper
1/2 cup flour
4 Tbsp butter, divided
1/4 cup chicken broth
1/4 cup lemon juice
1 tsp cornstarch
8 lemon slices
Cut each chicken breast in half length wise to make them thinner. Place chicken between waxed paper and flatten with a meat mallet. Sprinkle the chicken with salt and pepper. Lightly dredge chicken in flour.
Melt 2 Tbsp butter and olive oil in a large nonstick skillet over medium high heat. Cook the chicken in the skillet for 2-3 minutes per side. Transfer the cooked chicken to a platter and keep warm.
Add broth, lemon juice and cornstarch to skillet. Cook 1-2 minutes or until sauce is slightly thickened, stirring to loosen particles at the bottom of the skillet. Add the 8 lemon slices.
Remove skillet from heat. Add the butter and stir until butter melts. Pour sauce over chicken and serve with pasta.
Such a fresh tasting recipe that is as good as what you order from a restaurant. I'm telling ya, you keep cooking like this and you won't want to eat out! I bet this will become a family favorite in your house too.
