Key Lime Grilled Chicken Kabobs - Summer on a Skewer

If you have been following my earlier posts...
I just love using citrus flavors in foods, especially key limes.
So here's one final post using key lime as a marinade for chicken kabobs.

Key Lime Grilled Chicken Kabobs

Adapted from Grocery Budget 101
Ingredients:
3 tablespoons soy sauce
2 Tbs. honey
1 Tbsp vegetable oil
4 Tbsp key lime juice
1 Tbsp minced garlic
4 skinless, boneless chicken breast halves

In a small bowl combine soy sauce, honey, vegetable oil, key lime juice, and garlic.  Cut chicken into large chunks (kabob size) and place into marinade.  Cover and refrigerate for about 20-25 minutes.
I used metal skewers, but you can use bamboo skewers.  If you use the bamboo skewers, soak them in water while the chicken is marinading.  This will help the chicken to slide off the skewer.
Fire up your grill.
Remove the chicken from the marinade and skewer.
When the grill is ready, grill the chicken skewers on medium high heat for 6 to 8 minutes on each side or until juices run clear.

These smell divine while you are grilling them, so better make extra.  Your neighbors may invite themselves over!  Pair some steamed vegetables or rice with the key lime grilled chicken and you will be all set!  The key lime flavor really comes through...LOVE IT!
