Dill Dip for St. Patrick's Day

One of my favorite dips, Dill Dip!

This one is a good one in the summer when you have lots of fresh dill, but it's still winter and time to improvise so, just use the spice from the jar.

To make dill dip, you take equal parts sour cream and mayo.  Mix in 4 Tbsp minced garlic.  Add in lots of dill.  When you have fresh dill, you won't need as much.  If you are using dill from a spice jar, use liberally!  There are no set measurments for this dip.  Really, once you have combined the sour cream and mayo...the garlic and dill is added until you have reached the flavor you want.  Some like it more garlicky...others more dilly.  Don't you just love recipes that don't have to be exact?

Now, for St. Patrick's Day, I cut up cucumbers, carrots and green pepper.  Note the color scheme...you know, to represent the Irish flag.  I also added some spinach tortillas.  Take a package of spinach tortillas, cut into triangles and bake in a 375 degree oven for about 5 minutes or until slightly crisp.  Just a fun addition to dip in the dip!
