Temperatures are up. Temperatures on down. Fall can be a crazy time of year here in the Midwest. Makes it really hard to decide what to wear. I know you Southern people feel my pain...(tee hee hee) I do know one thing, I am not wearing boots or socks and shoes yet. Nope, not going to do it. I am waiting as long as possible because soon there will be no other choice. I have moved on from flip flops to closed toed shoes but, the boots are staying dusty in the back of the closet. Once you move on to those shoes, there will be no turning back. One of the best parts, of this time of year, is all the comfort food! One of my favorites is soup! A homemade soup is really inexpensive to make and warms you heart, body and soul....especially Cheesy Vegetable Soup!

Cheesy Vegetable Soup is a mix of broccoli cheese soup and potato soup.

Ingredients:
4 Tbsp butter, divided
1 cup carrots, chopped
1/2 cup onion, chopped
1 Tbsp minced garlic
3 cups chicken broth
3 cups peeled potatoes, chopped
1 1/2 cups broccoli floret (top part), chopped
1/4 tsp fresh thyme
salt and pepper to taste
6 Tbsp flour
2 cups milk
1 1/2 cups heavy cream
1 8 ounce block of cheddar cheese, shredded
1 cup fresh Parmesan cheese, shredded
Directions:
In a large pot, melt 2 Tbsp butter over medium high heat. Add carrots and onion. Cook for about 3-4 minutes, then add minced garlic. Stir in chicken broth, potatoes and thyme. Add salt and pepper. Bring to a boil and reduce heat to medium. Cook for 15 minutes with a lid on top. Add broccoli and cook for an additional 3-4 minutes. In a separate saucepan, melt 2 Tbsp butter. Stir in flour. Mix continually until a paste forms. Slowly stir in milk. Continue to whisk until mixture become thickened, then add the heavy cream. Pour this mixture into the vegetable mixture. Stir. Add the shredded cheddar cheese and Parmesan cheese. Serve warm.
