Quick and Easy Berry Crisp for 2

A Berry Crisp is always a good way to serve a berry dessert.



Made with blackberries, blueberries, raspberries and strawberries and topped with a crisp topping...you just might not share.  A scoop of vanilla ice cream melting on top? Oh yeah!  Run to your farmer's market and gather as many berries as you can because making this Quick and Easy Berry Crisp needs to be on your foodie summer list!

Ingredients for the berries:
1/2 tsp unsalted butter
1/2 cup each of blackberries, blueberries, raspberries and strawberries
3 Tbsp light brown sugar
2 Tbsp all purpose flour
Ingredients for the crisp topping:
1/4 cup quick oats
1 1/2 Tbsp brown sugar
1 Tbsp flour
2 Tbsp pecan chips
2 Tbsp unsalted butter
Directions:
Preheat oven to 375 degrees.  Rub 1/2 tsp butter in a small cast iron skillet.  Cut blackberries, blueberries and raspberries in half.  Quarter strawberries.  Place all the berries in a large bowl.  Stir in 3 Tbsp light brown sugar and 2 Tbsp all purpose flour.  Pour berry mixture into cast iron skillet.  In a small bowl, mix oats, brown sugar, flour and pecan chips. 
Use a pastry blender to cut in butter.  Sprinkle on top of berries.  Bake berry crisp in a 375 degree oven for 15-18 minutes.
Remove from oven and top with vanilla ice cream.
