Picnic Menu - Prosciutto Pinwheels

This time of the year, everything is outside. There are lots of outdoor concerts and festivals to attend.  Even the carnivals are just around the corner.   We love going to outdoor concerts up on the North Shore of Chicago, specifically Ravinia.  Classical and current musical concerts run almost every night during the summer months.  In fact, that's what we did for this past Father's Day.  A concert and a picnic.  Since eating outside is a must, I thought I would share a delicious picnic menu for you to create for your very own picnic.  Check out what's in my picnic basket...


This is an easy picnic to throw together.  One thing I hate about picnics is the work that can be involved.  I want something simple that looks like I really put a lot of effort into it, not something that makes me frazzled.  Including a bagged salad that contains the dressing, fresh fruit and vegetables and a main dish is all that a good picnic needs...and of course some dessert.  Easy!

What is an easy, portable main dish?  Prosciutto Pinwheels!


Prosciutto Pinwheels are perfect picnic food. 
 Easy to transport.  Do not need to be hot when served.  Looks fancy.  Pairs easily with a salad, fruit and a bottle of your favorite vino!


Each pinwheels is packed with prosciutto and Parmesan cheese rolled up in puff pastry.


Simple and delicious! 


Ingredients to make 12:
1 sheet of puff pastry, defrosted
1 Tbsp stone ground mustard
1 tsp honey
5 thin slices of prosciutto
3/4 cup fresh, shaved Parmesan cheese
nonstick spray
Directions:
Preheat oven to 400 degrees.  Spray a cookie sheet with nonstick spray.  On a floured surface, roll out puff pastry until all the creases are removed.  In a small bowl, mix mustard and honey.  Spread a thin layer on pastry surface.  Add slices of prosciutto then sprinkle with cheese.  Roll up tight from short end to short end.  Slice and place flat on prepared cookie sheet.  Bake at 400 degrees for 12-15 minutes.
