Almond Snickerdoodle Cookies

I was scanning through the blog and noticed I hadn't shared a cookie recipe in quite awhile.
So here you go...my new favorite!


Not much not to love about these cookies.
Almond Snickerdoodle Cookies are filled with a moist almond flavor inside and are surrounded by a sugary exterior.  A dollop of almond cream on top makes these cookies perfection!  I added a piece of strawberry to take these cookies to the divine level!  LUV  LUV  LUV!




Ingredients to make 2 1/2 dozen cookies:
1/2 cup unsalted butter, softened
1 1/2 cup sugar + 2 Tbsp sugar (granulated)
2 eggs
2 Tbsp almond paste
2 3/4 cup flour
2 tsp cream of tartar
1 tsp baking soda
1/4 tsp salt
Ingredients for almond cream topping:
1/2 cup cream cheese
1/4 cup almond paste
2 1/2 Tbsp sugar
2 Tbsp unsalted butter
Directions for making cookies:
Preheat oven to 350 degrees.  Set 2 Tbsp sugar aside in a small bowl.  Beat unsalted butter, almond paste  and 1 1/2 cups sugar until creamy.  Add eggs one at a time until blended well.  Slowly add flour, cream of tartar, baking soda and salt. 
Mix until well blended.  Shape into 1" dough balls and roll in granulated sugar.  Place on an ungreased cookie sheet. 
Bake for 8-10 minutes.  Remove from oven and cool on a wire rack.  Meanwhile, with an electric mixer, mix cream cheese, almond past, sugar and butter until nice and creamy.  Put a dollop of almond cream on each cooled cookie.  (add a piece of strawberry, if desired).



I have been making Snickerdoodle cookies for years and
changing them up by adding almond paste takes these cookies to a whole new level.
It's like they came from a bakery!
