Mini Cauliflower Pizzas

I have made cauliflower rice, but have never tried using shredded cauliflower as a pizza crust, which is totally trending.  Until now....


You would never know that the "pizza" crust is made of cauliflower!

It's garlicky and just right for pizza toppings.

Made with just a few ingredients, Mini Cauliflower Pizzas are perfect for dinner or as an appetizer!


Full of healthy ingredients so you won't feel guilty about having a few.
Besides, they are a great disguise for the kiddos!  It's pizza!  Who won't like that?


Ingredients:
1 head of cauliflower, shredded
1 tsp garlic salt
1 egg, beaten
3 Tbsp Italian bread crumbs
1 Tbsp olive oil
2 beefsteak tomatoes, 1/2" slices
1 cup shredded mozzarella
1-2 Tbsp basil seasoning
Directions:
Cook shredded cauliflower in a microwave safe bowl for 2-3 minutes on high.  Add garlic salt, beaten egg and bread crumbs.  Shape into round flat discs.  Heat olive oil in a skillet over medium high heat.  Saute cauliflower pizza crusts for 2-3 minutes, flip and cook an additional 2 minutes.  Remove to a cookie sheet.  Preheat oven to 375 degrees.  On each cauliflower pizza crust, top with a 1/2" slice of tomato, some shredded mozzarella and basil.  Cook in the oven until cheese melts and turns lightly brown, about 5-6 minutes.  Serve.
