Memory Lane Monday: Chicken Limone

It's Monday and time to take a walk down Memory Lane.
Chicken Limone is a favorite in our house.  Thin pieces of chicken in a wonderful lemon butter sauce is perfect for company as well as a dinner on your meal rotation.  It's easy, but looks fancy!



Each thin piece of chicken is full of that lemon flavor and is served over a bed of pasta.


Chicken Limone is so worth re-sharing.
As we move away from the heavy comfort foods of winter, Chicken Limone is a light dish for Spring and Summer.

Ingredients:
4 chicken breasts
1 tsp salt
1/4 tsp pepper
1/2 cup flour
4 Tbsp butter, divided
olive oil
1/4 cup chicken broth
1/4 cup lemon juice
1 tsp cornstarch
8 lemon slices
Directions:

Cut each chicken breast in half length wise to make them thinner.  Place chicken between waxed paper and flatten with a meat mallet.  Sprinkle the chicken with salt and pepper.  Lightly dredge chicken in four.

Melt 2 Tbsp butter and olive oil in a large nonstick skillet over medium high heat.  Cook the chicken in the skillet for 2-3 minutes per side.  Transfer the cooked chicken to a platter and keep warm.

Add broth, lemon juice and cornstarch to skillet.  Cook 1-2 minutes or until sauce is slightly thickened, stirring to loosen particles at the bottom of the skillet.  Add the 8 lemon slices.

Remove skillet from heat.  Add the remaining 2 Tbsp butter and stir until butter melts.  Pour sauce over chicken and serve with pasta.
