Chicken Parmesan Casserole with Pasta Chips

I was introduced to Pasta Chips during the Food Blogher Conference in May.  They were kind of enough to send me more!  (a food blogger perk)
I have had fun snackin' and incorporating those chips into a couple of recipes.

My family is a huge fan of Chicken Parmesan, but sometimes it is too laborious for a weeknight meal. So in comes the casserole...easy to make and there will probably be enough for 2 meals.  Or, so in theory.  You see, I used crushed Pasta Chips in the recipe to create a Chicken Parmesan Casserole.  Pasta Chips are what take this Chicken Parmesan Casserole over the top...no leftovers...unless...you pace y-o-u-r-s-e-l-f-!



Ingredients:
3 cups of cooked chicken (purchased or you cook), chopped into chunks
2 1/2 cups pasta sauce (jar or your own sauce)
2 cups fresh spinach, chopped
2 cups shredded mozzarella cheese
5 oz package of Vintage Italia Marinara Pasta Chips, crushed

Directions:
Preheat oven to 375 degrees.  In a 9 x 13 pan, place a layer of cooked chicken chunks.  Pour your pasta sauce over the chicken. Next, layer on the chopped spinach, then the shredded mozzarella cheese.  Sprinkle on the crushed Vintage Italia Marinara Chips.  Bake at 375 degrees for about 18-20 minutes.



You can have dinner on the table in less than an hour.  How's that for a quick weeknight meal?  Chicken Parmesan Casserole is so cheesy and tastes just like chicken parmesan, but with a new twist...crunchy marinara flavored Pasta Chips that top the casserole.  See what I mean?  So good, so no leftovers.
