Snickerdoodle Pie Bites

Snickerdoodle Pie Bites
I am sure you have heard of snickerdoodle cookies and maybe you have even heard of snickerdoodle pie.  But, have you heard of snickerdoodle pie bites?
I am loving everything that comes in bite size form because I can just have one or two and be completely satisfied.  They are bite size, right?  And, it's great for having with guests because really, who isn't watching their waist lines?  Besides, they are super fun!  Do you know what the "pie" part is made from?  I used phyllo shells!  Too cute, right?

Ingredients to make 30 snickerdoodle pie bites:
2 Tbsp sugar
1/2 tsp cinnamon
2 tsp melted butter
1/2 cup brown sugar
1/4 cup butter
3 Tbsp water
1/4 tsp cinnamon
1 1/2 tsp vanilla extract
1/4 cup butter
1/2 cup sugar
1/4 cup powdered sugar
1 tsp baking powder
1/2 tsp salt
1/4 tsp cream of tartar
1 egg
1/2 cup milk
1 1/4 cup flour
2 packages of mini phyllo shells
topping:  whip cream and cinnamon

Preheat oven to 350 degrees.

In a small bowl, combine 2 Tbsp sugar and 1/2 tsp of cinnamon.  Brush melted butter inside each mini phyllo shell.  Sprinkle inside of shell with cinnamon sugar mixture.  Place the shells on a cookie sheet.  Set aside.

For the syrup:  In a small saucepan, combine brown sugar, 1/4 cup butter, water and 1/4 tsp cinnamon. Heat over medium heat until boiling.  Stir to dissolve the sugar.  Boil for about 2 minutes, remove from heat and add 1/2 tsp vanilla extract.

In a mixing bowl, beat 1/4 cup butter and 1/2 cup sugar.  Add powdered sugar, baking powder, salt and cream of tartar.  Beat in the egg and vanilla.  Next add the milk and flour.  Spoon into the shells.  Then slowly pour some of the syryp over the top.  

Bake at 350 degrees for 15-20 minutes or until slightly browned.  Remove from oven and pour the remaining syrup on top.  Cool.

To serve, put a dollop of whip cream and sprinkle with cinnamon.




Snickerdoodle Pie Bites have a cake yet cookie like texture.  The phyllo shell is a perfect crust and makes them really easy to eat.  Great for a picnic!
