National Pina Colada Day - Pina Colada Frozen Mini Pies

Today is National Pina Colada Day!
I love all the flavors in a pina colada...the coconut...
the pineapple...the rum...yum, yum!
So, "if you like pina coladas and getting caught in the rain"...remember that song?
I do, I do...so here you go, Pina Colada in pie form?  Oh yea..



Pina Colada Frozen Pies!





Oh my, I am drooling!
All the flavors from a pina colada put into a little frozen pie.  I'd stand out in the rain for this pie, for sure!
No straw needed!  You need a spoon for this pina colada treat.
Ingredients:
1 package of 6 mini graham cracker shells
4 cups of vanilla ice cream
1 8oz can of crushed pineapple, undrained
2 tsp coconut milk
1 1/2 tsp rum extract
1/2 cup toasted coconut
maraschino cherries and whipped cream for topping the pies

Mix together vanilla ice cream, undrained, crushed pineapple, coconut milk and rum extract.  Spoon into mini graham cracker shells.  Freeze for 6 hours.  Top with toasted coconut, whipped cream and maraschino cherries.  (toasted coconut can be made on the stove top or oven, just brown coconut for a few minutes over heat).












Just grab a spoon, your beach chair and play some Jimmy Buffet music...
