Caramelized Onion Flatbread

I have become a flatbread fanatic!
Everytime I see anything on a flatbread, I feel the need to make it.  Not in the distant future, now...like right now!  When I saw a carmelized onion flatbread with honey goat cheese, I like literally ran to the grocery store to get all the ingredients and this is how it turned out...




I have become a crazed flatbread fanatic because making them is easy and fast and so interchangeable!  
You just need to start with a flatbread and then the possibilities are endless.
So this caramelized onion flatbread starts with a flatbread and is topped with caramelized onions, roasted cherry tomatoes, fresh mozzarella and crumbled goat cheese with honey.  Yes, honey!  That's what really intrigued me!  So here's how you do it.

Ingredients:
1 Vidalia onion, sliced
1 Tbsp butter
2 Tbsp olive oil
1 1/2 cups cherry tomatoes
sea salt
pepper
1 container fresh mozzarella, slice each mozzarella ball
6 oz crumbled goat cheese
2 tsp honey
4 whole wheat naan flatbreads

To make the caramelized onions:  Place butter and 1 Tbsp olive oil in a pan, melt over medium high heat.  Add sliced onions.  Cook until caramelized (browned) for about 10-12 minutes.

To make roasted tomatoes:  Heat oven to 400 degrees.  Place whole cherry tomatoes into a roasting pan.  Coat tomatoes with 1 Tbsp olive oil, sea salt and pepper.  Roast in oven for about 20 minutes.  Remove from oven a use a fork to flatten them slightly.

To make the flatbread:  On each whole wheat naan, add some of the caramelized onions.  Top with fresh mozzarella slices.  Add roasted cherry tomatoes.  In a small bowl, combine goat cheese and honey.  Add by goat cheese spoonfuls to the top of the flatbreads.

Bake the loaded flatbreads in a 375 degree oven for about 10-12 minutes or until cheese has melted.



The caramelized onion, as well as the roasted tomatoes, take on a sweet flavor.  What really makes this flatbread is the goat cheese that has been sweetened with honey...really, really good!


Now you know what to do with those cherry tomatoes you have been growing in your garden or getting at the farmer's market...so much more than using them in a salad.
