Cranberry Cheesecake Bites

I know you are probably super crazy preparing for Thanksgiving, especially if you have out of town guests coming.  So, I am going to get right to a sweet treat so you can focus on your meal and guest preparations.  If you don't serve these for Thanksgiving, these Cranberry Cheesecake Bites are the perfect little goody all the way through Christmas!  The best things come in small packages so bring them to any holiday party too!


Cranberry Cheesecake Bites can be gobbled up in just a couple of bites!
Swirls of sweet cranberry can be found throughout the cheesecake.  Then, each little nugget of goodness is topped with more sweet cranberry and a chocolate covered cranberry.  




Ingredients to make 30:
1 cup flour
1/4 cup brown sugar
1 stick unsalted butter, melted
8 ounces cream cheese (or nefchatel cheese which has 1/3 less fat)
1/2 cup granulated sugar
1 egg
1/2 tsp vanilla extract
1/2 cup cranberries
1 Tbsp honey
1 tsp cranberry or apple juice
chocolate covered cranberries
Directions:
Line a mini muffin pan with cupcake liners.  Preheat oven to 375 degrees.  Mix flour, brown sugar and melted butter in a bowl.  Once combined, press mixture into mini cupcake lined muffin pan.  Bake at 375 degrees for 8-9 minutes. 
Meanwhile, whip cream cheese, granulated sugar, egg and vanilla extract to make the cheesecake.  Set aside.  In a small pot, mix together cranberries, honey and juice.  Cook over medium heat for 3-4 minutes until thickened and berries are popping.  Cool.  Once cool, spoon out 2 teaspoons of cranberry sauce to reserve for later.  With the remaining sauce, swirl into cheesecake mixture.  Spoon the cranberry cheesecake mixture onto the baked crusts.  Decrease the oven temperature to 350 degrees.  Bake for 16-18 minutes.  Remove from oven and cool.  Once cool, remove cupcake liners.  Divide the remaining cranberry sauce among the cheesecakes.  Top with a chocolate covered cranberry and store in refrigerator until ready to use.
