Hoisin Shrimp with Roasted Vegetables

I don't know about you, but sometimes I just need a one pan meal that I can go to when things are crazy busy.  I know there are times when things are so hectic that it is easy to swing by a fast food restaurant to pick up dinner.  Believe me.  Been there, done that and still do that on occasion.  So, I love having one pan meals that are a much more healthy alternative. 
Here's what I am talking about.


Hoisin Shrimp and Roasted Vegetables is what I am talking about!
Hoisin Sauce is kind of known as an Asian flavored barbecue sauce, a sweet plum sauce that is wonderful on seafood and vegetables.  You will love the flavor and the easiness of this dish.


Chop the vegetables, toss in the sauce and roast in the oven for 20 minutes.  You will have dinner ready in 45 minutes or less.  How's that for an easy meal?

Ingredients:
1/4 cup hoisin sauce
2 Tbsp soy sauce
1 Tbsp rice wine vinegar
2 tsp sesame oil
2 Tbsp vegetable oil
2 tsp sesame seeds
1 shallot, chopped
1 red pepper, chunked
1 orange pepper, chunked
1 yellow pepper, chunked
1 head of broccoli, chunked
1 cup mushrooms, chopped
2 lbs raw shrimp, peeled and deveined
fresh chives
Directions:
In a small bowl, mix together hoisin sauce, soy sauce, rice wine vinegar, sesame oil and vegetable oil.  Preheat oven to 400 degrees.  In a large roasting pan, place shallots, peppers, broccoli, mushrooms and raw shrimp.  Pour hoisin sauce mixture over the shrimp and vegetables.  Toss to coat.  Place in a 400 degree oven for 20-24 minutes.  Remove from oven and sprinkle with fresh chopped chives and sesame seeds.


All in one dish!  Bursting with flavor!  Done in less than 45 minutes!

Pass that fast food restaurant by because you are having dinner at home tonight!
