It is my lucky day today!
Nope, I didn't win the lottery. I did get out of laying any of the mulch my hubby ordered to be spread in all the garden beds. Not having to help was pretty darn lucky. It is my lucky day because I am a coffee lover and an ice cream lover which is just perfect because today is National Coffee Ice Cream Day! Who knew?
To celebrate, I have a simple throw together Coffee Ice Cream Cupcake so you can celebrate today or any day you crave the combo.
A layer of coffee ice cream surrounded by chocolate cookie crusts.
Made with very few ingredients to get an adult, frozen treat...unless you have a three year old enjoys the flavor of coffee. :)
Ingredients:
1 9 ounce package of chocolate wafer cookies
1/2 cup butter, melted
1 pint coffee ice cream, softened
chocolate syrup
butter for preparing muffin pan
toppings: whipped cream and chocolate sprinkles
Directions:
Wipe the bottom and sides of each muffin cup with butter. In a food processor, crush all of the chocolate wafer cookies into crumbs. Mix the cookie crumbs and melted butter in a bowl. Press approximately 1 1/2 Tbsp of the cookie crumb mixture into each muffin cup bottom to form a crust. Spoon softened coffee ice cream into each muffin cup. Drizzle with chocolate syrup and then top with remaining cookie crumbs. Place in the freezer for 2-3 hours. Before serving, top with whipped cream and chocolate sprinkles.
Coffee ice cream first made it's appearance back in the late 1800's. It was made from cream, crushed ice and coffee. It has come a long way since then. Now you can make your own coffee ice cream inspired treats just like I did. Coffee Ice Cream Cupcakes are a little pick me up that will also satisfy that sweet tooth. Sounds like a win win!
