I am counting the hours until it is Memorial Day weekend! Whether the official or unofficial start to summer, I am ready. Unfortunately we have 4 snow days to make up, but then it will be summer! No schedules and long days being barefoot and fancy free. I cannot wait! So let's talk Memorial Day food ideas. Here's a cool and creamy pasta salad to serve as a main dish or side salad.
Pasta salads are such a great addition to your summer recipe rotation.

Ingredients:
12.3 ounces plain Greek yogurt
1 Tbsp fresh chopped dill
1/2 Tbsp lemon juice
1 Tbsp minced garlic
1 tsp sea salt
1/2 tsp fresh ground pepper
2 cucumbers, seeded and chopped
1 16 ounce package mostacolli pasta
7 ounces sun-dried tomatoes, drained and chopped
4.25 ounces chopped black olives
8 ounces feta cheese
Directions:
Cook mostacolli pasta according to package directions. Drain and rinse with cold water. In a large bowl, mix Greek yogurt, fresh chopped dill, lemon juice, garlic, sea salt and fresh ground pepper. Add the drained pasta and stir. Stir in chopped cucumbers, chopped sun-dried tomatoes, black olives and feta cheese. Refrigerate until ready to serve.
Serve with a warm loaf of bread. If you want to make it a main meal, add some cooked, shredded chicken. All those Greek flavors just make this pasta.
