I have seen this recipe idea floating around in cyberspace.
The concept is to shred cauliflower on a grater to create rice size pieces.
Then, you are to cook the cauliflower rice in the microwave and presto...all done.
Could that really work? I decided to give it a try and....not only did it work, but it was so tasty!
All you need is a head of cauliflower, salt and pepper to taste, 2 Tbsp Parmesan Cheese and 2 Tbsp butter.

Grate the cauliflower, place into a microwave safe bowl and microwave for 2 minutes. No water needed!
Just add the salt and pepper to taste, Parmesan cheese and a couple of tablespoons of butter. That's it!
A great replacement for rice or mashed potatoes!!!
