Melted Hot Chocolate Cookies

You know that time of the year when you can hunker down inside under a blanket with a warm cup of cocoa?  That season is here!  Kind of comforting, right?  Well, how about that warm cup of hot chocolate in cookie form?  Perfect for those cold, snowy days and for cookie exchanges.

Hot Chocolate flavored cookies with melted marshmallow on top!  YUM!

This cookie recipe starts with a basic sugar cookie recipe and then you add a sprinkle of this and a dash of that to transform them into one delicious cookie!

originally from Chef Duff Goldman
makes 3 dozen
2 sticks of unsalted butter, softened
3/4 cup sugar
2 Tbsp molasses
1 egg
1 tsp vanilla extract
2 3/4 cup flour
1/4 tsp baking powder
1/4 tsp salt
3 Tbsp hot cocoa mix
pinch of cinnamon
marshmallow cream
Beat the sugar, molasses and butter until light and fluffy.  Add the egg and vanilla extract.
Beat until creamy.  In a separate bowl, combine flour, baking powder, salt, cocoa mix and cinnamon.  Slowly add to the butter mixture.  Mix until just incorporated.  Batter will be stiff.  Shape dough into a ball, wrap in plastic wrap and refrigerate for an hour.  Roll out dough to a 1/4" thickness.  Cut into shapes.   Preheat oven to 350 degrees.  Place cut out cookies onto a parchment lined baking sheet.  Re-roll extra dough and repeat cutting out cookies.   Bake for 10-12 minutes.  Add a dollop of marshmallow cream to each warm cookie.  Return to oven for 30-40 seconds until the marshmallow melts.   Serve warm,  Store extras in an airtight container, do not stack.

You know you want some right now.  The warm hot chocolate flavored cookie is topped with melted marshmallow.  Not much better than hot chocolate in cookie form!
