Shrimp Po' Boy Sliders

I pretty much love anything shrimp.
 Must be due to my Floridian upbringing?  However, the girls are shrimp lovers too and they are Midwestern thru and thru.  Hmmm, maybe it's a genetic thing?  Anyhow, check out one of my many, many favorite ways to serve shrimp.


Crisp lettuce and a creamy chili seasoned shrimp fill these mini pretzel rolls.


A fresh ear of corn and some boiled red potatoes complete this summer meal.


Ingredients to make 8 sliders:
1 lb uncooked shrimp
1 Tbsp butter
1/2 tsp olive oil
1/2 tsp chili powder
1/2 tsp salt
1/4 tsp fresh ground pepper
1/2 cup mayo
1 tsp lemon juice
1/2 tsp salt
1 green onion, chopped
1 tsp chili seasoning
butter lettuce
pretzel rolls
Directions:
Peel and devein shrimp.  In a large saucepan, melt butter and olive oil over medium high heat.  Add chili powder, salt and ground pepper.  Stir in shrimp and cook for about 4-5 minutes, until no longer pink.  Remove to a cutting board and chop shrimp.  Let cool.  Once shrimp is cool, stir in mayo, lemon juice, salt, green onion and chili seasoning.  Take pretzel rolls and cut a wedge out of the top.  Stuff with butter lettuce and creamy, seasoned shrimp.  Serve with ears of corn and red potatoes.



Totally reminds me of a meal by the beach!
