I don't know about you, but the closer we come to the end of the school year, the crazier things become. No more hibernating! Everyone is out and about! There are end of the year celebrations for EVERYTHING,spring concerts, baseball games, gardening projects...you name it and it is probably on your calendar for the month of May! Just like the beginning of the school year, May is crazy!!! So easy, yet fun dinners need to be ready.
Start with some cooked chicken and mix in a creamy home-made spinach dip made with fresh spinach. Bake it all in biscuit lined muffin cup and then top it off with marinara sauce.
Dip for dinner? You betcha!
Boil and shred your own chicken or start with pre-made cooked chicken.
It's creamy...it's flavorful...it comes together quickly so that you have time for a home cooked meal before you head out to that soccer game, play or concert.

Ingredients to make 20:
2 Tbsp olive oil
1 Tbsp minced garlic
1 5 ounce bag of fresh spinach
salt and pepper to taste
8 ounces cream cheese
2 cups cooked, shredded chicken
2 tubes of biscuits
1 jar of marinara sauce
1 cup fresh Parmesan cheese
Directions:
In a large skillet over medium high heat, add olive oil. When olive oil is heated, add garlic and cook until fragrant, about 3-4 minutes. Add the spinach and wilt. This will take approximately 4-5 minutes. Sprinkle with salt and pepper to taste. Preheat oven to 350 degrees.
In a large bowl, combine cream cheese and shredded, cooked chicken. When combined, add wilted spinach. Mix all together. Use a muffin pan. Place one biscuit in each muffin cup. Press slightly up the sides of the muffin cup to form a base cup. Spoon in the cream cheese-spinach-chicken mixture. Bake at 350 degrees for 15-18 minutes. While the Spinach Dip Chicken Bites are baking, heat the marinara sauce. When the Spinach Dip Chicken Bites are done baking, top each with heated marinara sauce, sprinkle with Parmesan cheese and serve.
Everything in one little package and cooked in 30 minutes.
Now that is a fast dinner!
