Cajun Snack Mix

When the Paczkis arrive in my neck of the woods, I know it is Mardi Gras season and Fat Tuesday is a comin'!  Paczkis are Polish pastries eaten on Fat Tuesday here in the U.S. Paczkis are similar to Beignets and other filled donuts.  If you don't have a chance to get to either of those,
make sure you check out my recipe for Heart Beignets.  They are a quick and easy way to make your own Paczkis or Beignets or donuts or whatever you want to call them.  They are a fun way to celebrate Fat Tuesday.

Cajun Snack Mix
a yummy snack, especially with a cold beer or maybe a fancier New Orleans' style libation.

See what I mean.  Totally a bar food or an ice tea sippin' snack!
Cajun Snack Mix has a lil' bit of a kick, just enough to let you know it's there, but not enough to make you sweat!  Easy peasy!  Check it out!
1 cup oyster crackers
3 cups pretzels
1 cup dry roasted peanuts
1/4 cup unsalted butter
1/2 Tbsp Cajun seasoning
Place oyster crackers, pretzels and dry roasted peanuts in a shallow baking dish.  Mix to combine.  Preheat oven  to 375 degrees.  Melt butter in the microwave; about 30 seconds to 1 minute on high.  Stir in Cajun seasoning.  Pour over the snack mixture.  Stir to coat.  Bake at 375 degrees for 10 minutes.  Stir and bake an additional 5 minutes.  Cool and store in an air tight container.
Only 15 minutes to create that Mardi Gras feel!
