Autumn Chopped Salad

I don't know about you, but I can eat salad anytime of the year.
Salads are extra good when you can incorporate the flavors of the season.




This Autumn Chopped Salad does just that.  Romaine lettuce and fresh spinach tossed with slices of Granny Smith apples, bacon bits, red onions, sugared walnut pieces, dried sweet cranberries and blue cheese.  All those delicious flavors drizzled with a home-made Balsamic Vinaigrette.  Delightful!



Are you ready for what you need?  Well, here ya go.

Ingredients for salad:
1 head Romaine lettuce, chopped
2 cups chopped, fresh spinach
1 Granny Smith apple, sliced
1 3oz bacon bits
4 oz dried, sweet cranberries
3 1/2 oz sugar glazed walnut pieces
4 oz blue cheese crumbles
1/2 of a red onion, sliced
Ingredients for Balsamic Vinaigrette:
1/4 cup olive oil
4 Tbsp Balsamic vinegar
1 tsp minced garlic
1/4 tsp fresh ground pepper
1 Tbsp brown sugar
1/2 tsp salt

Directions:
Toss together all salad ingredients.  Whisk all vinaigrette ingredients together.  Drizzle dressing on top.  Serve.
