Pesto and Goat Cheese Crostini

PESTO AND GOAT CHEESE CROSTINI are one of my absolute favorite appetizers!
I have shared these on the blog before, but that was back when I didn't have a great camera lens.  They looked pretty good then, however, look at them now!

This is an easy recipe that is full of flavor.  A great idea for all those tomatoes in your garden!



Here's all you need to make Pesto and Goat Cheese Crostini.
Ingredients:
1 baguette
4 oz goat cheese
3.5 oz pesto
2 Roma tomatoes
3 oz shredded mozzarella cheese

Directions:
Preheat oven to 375 degrees.
Slice your baguette into 1 inch slices.  Make 12 slices.  You may have extra bread or not, depending on the size of your baguette.  Put each slice onto a cookie sheet.
Mix together goat cheese and pesto.  Set aside.
Slice the Roma tomatoes into thin slices.
Spread 1 Tbsp of the pesto/goat cheese mixture onto each slice of baguette.  Top with a tomato slice and sprinkle on some shredded mozzarella cheese.
Place into the oven and bake 7-8 minutes, or until cheese melts.


So easy, right?  The pesto and goat cheese combo just seems to melt in your mouth and make you crave more.  I am thinking this could also be a meal, especially when you want something yummy and quick.  Or, how about when you have your neighbors pop over for cocktails?  In any case, Pesto and Goat Cheese Crostini will become your favorite too.
