Apple Cheddar Bacon Paninis

I kicked off this September season with a scrumptious
Apple Cinnamon Chip Cookie Sandwich.
Labor Day had just finished and I couldn't wait to share...those cookies are soooo good!
Since seasonal simplicity is the premise behind the blog, I have lots and lots of apple recipes to share over the course of the month.  So check back often to see what's happening!

Most of the time when you think of apples, you go straight to apple pie.  At least I know that is true for the hubby 'cuz he is totally a pie man...well, any dessert really.  Sometimes I think that was why he married me:  my dessert creating skills.  Ha!  Anyway, apples don't have to be used just in sweet dishes.  Apples are fabulous in savory dishes too!  So I pulled out one of my favorite panini recipes that I have shared before.  They are worth repeating!!!  And pictures do not lie....



Apple Cheddar Bacon Paninis
The flavor combination is out of this world!



This will become your new favorite panini!  Check it out...

Ingredients:
8 Slices of Crusty Pane Italiano Bread
12 slices of crispy, cooked bacon
16 slices of cheddar cheese
16 thin slices of Granny Smith apples
1 red onion, chopped
2 tsp olive oil
salt and pepper
1 cup mayo

Directions:
Start by making the roasted red onion mayo.  Preheat oven to 375 degrees.  Place chopped red onion into a large roasted pan.  Toss with olive oil and salt and pepper.  Roast in the oven for 25 minutes.  Remove and cool for 10 minutes.
Place the onions into a mini chopper.  Pulse until you have much smaller pieces.  Add mayo and pulse until smooth.
To make the panini, spread the roasted red onion mayo onto each slice of bread.  Then top each with slices of cheese.  You can use large sandwich slices of cheddar cheese or slices from a cheddar cheese block (which I did).
Top one side of the sandwhich with bacon and apple slices.  Then flip the other slice of bread (which also has red onion mayo and cheese) on top.

Heat up an indoor grill or a George Foremen grill.  Place panini on the hot grill.  Close top and grill until bread is toasted.


Each panini has the crispy, smoky flavor of bacon combined with the sweet crunch of apple.  The roasted red onion mayo and cheese push the panini over the top of panini goodness!  You will love the combo!  Don't all those flavors just say that fall is on the way?  What flavors do you think of that totally say fall?
