Bunny Tails-Tropical Style

I have not seen a single bunny since last Fall.
I think they are all still hibernating.  Do bunnies do that?
Anyhow, there are quite a few "bunny tail" recipes out there since we are in the season of bunnies.
But, I thought I would share a bunny tail recipe that is TROPICAL STYLE!


I bet you can tell part of what makes these bunnies tails tropical?

These are Key Lime Coconut Balls and they look just like bunny tails.
They have a tropical twist with key lime and coconut.
Just pop one in your mouth and there will be a burst of tropical flavors.
In fact, you may just hop up and do the salsa.

Ingredients:
2/3 cup graham cracker crumbs
6 Tbsp sweetened condensed milk
1 1/2 tsp key lime juice
1 tsp vanilla extract
1 cup shredded coconut, divided
1 1/4 cup powdered sugar

Mix together the graham cracker crumbs, sweetened condensed milk, key lime juice and vanilla.  Add 2/3 cup coconut and beat entire mixture with a mixer for 1-2 minutes.  Add the powdered sugar, 1/4 cup at a time until all incorporated.  Cover and chill in refrigerator for about 30 minutes.

Shape mixture into teaspoon size balls (approximately 24).  Place remaining 1/3 cup coconut in a bowl.  Roll each ball in coconut.  Return to refrigerator until ready to use.


Those would look so cute on a Spring dessert table.
The key lime and coconut are a perfect Spring time flavor.
So, if you want to make some bunny tails,
try this tropical version for something different!
