Pepperoni Pizza Cupcakes, Say What?

Ever have left over pizza or spaghetti sauce and you just don't know what to do?
I know, there are world issues out there, but sometimes this can be quite the dilemma!
Well, A Sprinkle of This and That will come to the rescue!

The simple solution...Pepperoni Pizza Cupcakes!  Say what???

Pepperoni Pizza Cupcakes

Who knew you could eat pizza in cupcake form?  Well, you can.
You will need a package of grand biscuits, shredded mozzarella and pepperoni in addition to your leftover pizza or spaghetti sauce. You only need a cup of the sauce for the cupcakes.  You will also need your regular size cupcake pan.

Slice all of your biscuits in half.  Place one of the half slices into your ungreased cupcake pan.  Kind of push it around (that's a fancy kitchen term) until it fills the bottom and some of the sides of each cupcake slot.  No need for perfection at all.  They will come out just fine!  You should have 4 half slices left.  Set those aside.  Next, spoon a tablespoon full of sauce onto the biscuit. Place in a pepperoni or two and then sprinkle on the mozzarella cheese, right in the center.  Now, take the 4 half slices of leftover biscuit and divide each of those into thirds.  You didn't know this was a math lesson, did you?  You should have 12 pieces of dough.  Top each pepperoni pizza cupcake with the biscuit piece and pop into a 350 degree oven for about 8-10 minutes.

Yum!  Doesn't that look delicious!  Serve with a salad and you have a great quick weeknight meal or make as a snack for football season.  Either way, you are sure to enjoy.  Get your kiddos involved and it can be a math lesson too.  Who knew?
