What's your favorite romantic movie?
My favorite, hands down, is The Notebook by Nicholas Sparks.
No matter how many times I watch it, I need a box of tissues. Gets me every time.
I just love a good, sappy movie whether it is Valentine's Day or not. How about you? Do you love a good tear jerker?
You know what else I love?
A yummy dessert, especially little bites of scrumptious goodness.
Cherry Frosted Angel Food Cupcakes fit that bill.
You need absolutely no reason not to have a cupcake!
These cupcakes are light and have an amazing cherry flavored frosting,
6 ingredients! Yes, that is it!
And just wait until you see what gives the frosting that cherry flavor!
The recipe will make 36 cupcakes which is perfect for a party, book club, Bunco, girl's night in, Valentine's Day...any gathering. Oh, and the cherry flavor? Keep reading...
The cherry frosting is flavored with a packet of cherry kool-aid. Not only does the packet add flavor, but also a pretty color.
I love these cupcakes and I think you will too!
Ingredients:
1 16 ounce box angel food cake mix
1 1/4 cup cold water
2/3 cup powdered sugar
1 1/2 cups whipping cream
1 packet cherry kool-aid (.13 ounces) powder
nonpareils
Directions:
Preheat oven to 375 degrees. In a large bowl, Beat angel food cake mix and water on low. Turn up the speed to medium and beat for an additional minute. Line a cupcake pan with cupcake liners.
Spoon batter into each cupcake lined cup (approximately 3/4 full). Bake at 375 degrees for 12 minutes. Remove from oven and cool. Once cupcakes have cooled, beat whipping cream, powdered sugar and kool-aid powder until stiff peaks form. Frost cupcakes and add a sprinkle of nonpareils.
Ok...here's the plan. Make a batch of these cupcakes and pull out your favorite romantic movie...tissues are optional. :)
Celebrate the little things that make life sweet,
Christine
