Cranberry Apple Coffee Cake

Years ago I gave my hubby a telescope for Christmas.  Nothing fancy, just a very basic telescope.  
He was so excited and used it quite often for the first week of having it in his possession.  But like any "toy," it ended up in a closet for years.
The telescope has been dusted off and is now back in action.  Maybe it was the release of the Star Wars trailer?  Nah, he isn't really a Star Wars fan.  However, possibly it got him to thinking about the world beyond Earth.  Or he is just strange.  Ha!  He even dragged me out to see what he was gazing at.  I have to say, I was pretty impressed.  We were able to see craters on Venus!  Just a simple telescope with views of that are out of this world...literally!  His next mission is to spot the rings of Saturn!  Anyhow, check out this out of this world coffee cake!  You'll be the first to know if Saturn's rings are seen from our telescope!  In the meantime, on to the coffee cake...


Cranberry Apple Coffee Cake is topped with  fruit from the season!


Fresh tart cranberries and apples oooze their juices into the coffee cake.
And, you know what?  Cranberry Apple Coffee Cake is made with whole wheat flour and yogurt, making it healthier.  


Dusted with powdered sugar finishes off this Cranberry Apple Coffee Cake.

Ingredients:
1/2 cup light brown sugar
1 1/2 Tbsp cornstarch
1/4 tsp cinnamon
1 1/2 cups cranberries
1 tart apple, chopped
1/4 cup cranberry cocktail juice
1 cup flour
1/2 cup whole wheat flour
1 tsp baking powder
1/4 tsp salt
1/8 tsp baking soda
1/2 cup vanilla yogurt
3/4 cup granulated sugar
1 1/2 tsp vanilla extract
1/2 cup milk
1 egg, beaten
nonstick spray
powdered sugar for dusting
Directions:
Place light brown sugar, cornstarch, cinnamon, cranberries, chopped apple and cranberry juice into a medium pot.  Heat ingredients over medium high heat until thickened.  Set aside.
Preheat oven to 375 degrees.  Spray a springform pan with nonstick spray.  Mix flours, baking powder,salt and baking soda in a bowl.  In a separate bowl, mix yogurt, sugar, vanilla extract, milk and egg.  Once all combined, add dry mixture a little at a time.
Stir until combined.  Pour batter into prepared pan.  Spoon cranberry/apple topping over top.  Bake at 375 degrees for 40-50 minutes.  Cake will puff up and spring back when touched, berries will be wet and juicy.  Remove from oven and transfer to a wire rack.  Cool for 20 minutes before removing pan sides.  Dust with powdered sugar before serving.
