National Chocolate Cupcake Day 2015

Yum
Today is National Chocolate Cupcake Day for 2015!
You didn't really think I could pass this one by, did ya?
National Okra Day or National  Black Eyed Pea Day?  Yea, those I can just let pass by without any grand celebration.  A day that celebrates not just cupcakes, but chocolate cupcakes?  No way I can let that one go by without pulling one out of the archives.

Chocolate and peanut butter are always, always, always a great combo!

You will savor each and every bite!  Adding some Reese's Pieces MM's make these cupcakes even more scrumptious!

Ingredients to make 1 dozen:
1 cup sugar
1 cup flour
1/2 cup cocoa powder
1/2 tsp baking powder
1/2 tsp baking soda
1 egg
1 banana
1/2 cup milk
1/4 cup vegetable oil
1/2 tsp vanilla
Directions:
Preheat oven to 350 degrees.  Cream together egg, banana, milk, vegetable oil and vanilla.  Add the sugar, flour, cocoa powder, baking powder and baking soda.  Mix until well combined.  Pour into baking cup lined muffin tin and bake for 18-20 minutes at 350 degrees.  Remove from oven and cool.
Ingredients for peanut butter frosting:
1 cup powdered sugar
1 cup crunchy peanut butter
6 Tbsp unsalted butter
1/3 cup cream
3/4 tsp vanilla
Reese's Pieces candies
Directions:
Cream together powdered sugar, peanut butter and unsalted butter.  When well combined, add cream and vanilla.  Frost on cooled cupcakes and add some Reese's Pieces candies.

So tell me, are you tempted?
If so, my job here is done.  Bake up a batch of Chocolate Banana Cupcakes with Peanut Butter Frosting for National Chocolate Cupcake Day or any day you feel like a special treat.

Celebrate the little things that make life sweet,
Christine
