What better way to kick start your week than with chocolate!
A brownie with marshmallow, chocolate buttercream frosting and a dusting of graham cracker crumbs will keep you happy Monday through Friday.
I don't know about you, but come Sunday, I start thinking about all the things I need to accomplish at work and at home throughout the week. Sometimes it seems pretty daunting! But, with a S'more Brownie Cupcake, all those worries disappear...at least until this fabulous dessert is gone. Ha!
You may just skip the fork and just do a face plant on this yummy treat.
Each S'more Brownie Cupcake has a soft marshmallow center...mmmm....mmmm...good.
Ingredients to make 12:
1 pkg Brownie Mix
2/3 cup vegetable oil
1/4 cup water
2 eggs
package of mini marshmallows
nonstick spray
1 stick of butter
1 cup powdered sugar
1 1/2 Tbsp chocolate syrup
1/4 cup graham cracker crumbs
1 graham cracker
Directions:
Preheat oven to 350 degrees. Make brownie mix according to package directions. Mine required the brownie mix with 2/3 cup vegetable oil, 1/4 cup water and 2 eggs. Spray a muffin pan with nonstick spray. Pour brownie batter into prepared muffin pan. Place 4 marshmallows on top of each. Press lightly into the batter. Bake at 350 degrees for 30 minutes. Remove from oven. Top with 3 additional mini marshmallows. Return to the oven for 2 minutes. Let cool in pan. Use a knife to run along the edge of each brownie to pop out and remove.
Use a mixer, whip the butter. Then add the powdered sugar. Whip until smooth. Mix in the chocolate syrup. When well combined, frost the cooled brownies. Sprinkle graham cracker crumbs on top and add a piece of a graham cracker.
I bet your Sunday evening will be just dandy with this little treat to kick off the week.
