Over the weekend I was watching the Tour de France. I have absolutely no idea who is in the lead or all the nuances that come with the race. But, I so enjoy seeing glimpses of the scenery and catching those crashes. I know, kind of messed up...beautiful scenes of the countryside and awful bike crashes...kind of sick I suppose. Anyhow, this dessert reminds me of a fresh, rustic dessert that one might find in the French countryside.
Full of lemon flavor that is just perfect for summer and pretending you are in the French countryside.
Ingredients:
1 cups flour
1 stick unsalted butter
1/4 cup powdered sugar
2 eggs
2 Tbsp lemon juice
1 cup granulated sugar
2 Tbsp flour
1/2 tsp baking powder
1/4 tsp salt
powdered sugar for dusting
Directions:
Preheat oven to 350 degrees. Melt butter in a pie pan in 350 degree oven. Remove pie pan from oven. Mix flour and powdered sugar in a bowl. Stir the mixture into the melted butter. Press onto the bottom of the pie pan to form the crust.
Bake at 350 degrees for 15 minutes. Meanwhile, beat the eggs and lemon juice. Mix the granulated sugar, 2 Tbsp flour, baking powder and salt. Once mixed, add to the egg/lemon juice mixture. Mix until well incorporated. Pour entire mixture over the hot crust. Bake at 350 degrees for 20-25 minutes. Remove from oven and dust with powdered sugar.
Store in refrigerator.
The crust of this pie is almost like a shortbread and the lemon filling is so refreshing!
