Pumpkin Biscotti

Have you ever had a warm cup of cider, a cup of coffee or a cup of tea and 
you just felt like something was missing?
I know what it was!



PUMPKIN BISCOTTI

Sometimes you just need a lil' something something with that warm cup of liquid!



Just imagine yourself curled up next to the fire, underneath a blanket, sipping something warm, reading a book and snacking on a slice of pumpkin biscotti.  Sounds heavenly no?  I am going to make that dream of mine happen!!!  As soon as I finish Christmas shopping....ahhhhh!
Anyhow, here's how you can make your own dream that includes pumpkin biscotti!

Ingredients:
2 eggs
3/4 cup pumpkin pie filling
1 tsp cinnamon
1 3/4 cup white flour
2 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder
1 1/2 cups brown sugar
1 tsp vanilla
1 pkg white chocolate melting discs
Directions:
Preheat oven to 350 degrees.
Mix together eggs and pumpkin pie filling.  Add cinnamon.
Slowly add flours, baking soda, baking powder and brown sugar.  Once well combined, mix in the vanilla.  Shape into 2 logs. Bake at 350 for 30-35 minutes.  Remove from the oven and cool for 10 minutes.  Cut into 1" slices and lay each piece down ont baking sheet.  Bake 20 minutes at 250 degrees.
Cool on a wire rack.
Melt the white chocolate discs, according to package directions.  Frost each biscotti.


Now you know what your warm beverage has been missing.
The cold is coming!  Time to snuggle up and enjoy some pumpkin biscotti.
