Spinach, Bacon and Gorgonzola Pizza Flatbread

Yum


This flatbread is delicious and filled with all kinds of goodies.  Each bite has a tantalizing mix of flavors like gorgonzola, bacon, pecan chips, fresh spinach and splashes of balsamic vinegar.  What is it?
Spinach, Bacon and Gorgonzola Pizza Flatbread
Your flatbread has never been fancier.

Ingredients:
1 frozen bread loaf, defrosted
2 Tbsp minced garlic
1 Tbsp sea salt
1 1/4 cup coarsely chopped fresh spinach
4 oz crumbled gorgonzola
1/4 cup pecan chips
1/4 cup bacon bits
3/4 cup shredded mozzarella cheese
1 Tbsp olive oil
2 Tbsp balsamic vinegar

Directions:
Preheat your oven to 375 degrees.  Stretch you pizza dough to fit your cookie sheet. 
Onto the dough, sprinkle on the minced garlic and the sea salt.  Next add the coarsely chopped fresh spinach, pecans, bacon and gorgonzola. Top with shredded mozzarella and drizzle on the olive oil.  Bake in the oven for about 15-18 minutes.  Once the cheese has melted, remove from the oven and drizzle on some balsamic vinegar.




There is an explosion of flavor in each and every bite.  I love how the gorgonzola adds a bit of "bite" to the pizza flatbread.  The pecan chips are unexpected yet oh so good.  And, the bacon?  Well, everything is better with bacon.
