Pizza Friday-No Calories?

Who's counting calories?
No one right?  If you are like me, I try to eat pretty well during the week.  But come Friday, I am so ready for a treat.  Besides, it is pizza Friday in our house, so I just don't worry about calories that day.  It's Friday!  Here's what we are making...notice I said we.  I enlist my family members to help.


Yum and it even has a fun name...Bubble Up Pizza!  The recipe originates from www.plainchicken.com
Here's what you need to make this bubbling up pizza.  Bet you didn't know that was possible...
 
2 cans golden layer buttermilk biscuits
1 jar pizza sauce or your own tomato sauce
2 cups shredded mozzarella cheese
your favorite pizza toppings cut into bite size pieces
cooking spray

Preheat oven to 375 degrees.  Cut biscuits into quarters and place in medium bowl.  Toss biscuits with pizza sauce.  Add pizza toppings and half of the cheese.  Toss until well blended.  Spray a 9x13 pan with cooking spray.  Pour biscuit mixture into pan and top with remaining cheese.  Bake at 375 for 25-30 minutes, or until biscuits are done.

This is a super quick pizza casserole recipe with 0 calories!  OK, I'm lying.  But, it is super good and super easy.  There are also varieties of bubble up pizza you could create too.


The directions at www.plainchicken.com are the same as the red sauce bubble up pizza.  Just switch out the red sauce for a jar of Alfredo sauce.  Add 1/2 tsp of garlic powder and 2 cups of cooked, chopped chicken.  Mushrooms are a great addition too.


Another fun variety of bubble up pizza is Bubble Up BBQ Chicken Pizza.  Stick with the biscuit rolls.  Cut them up into quarters and toss with 1 1/4 cup BBQ sauce, 2 cups cooked, chopped chicken and 1/3 cup chopped bacon.  Set aside.
Mix together 1 cup of shredded cheddar cheese and 1 cup of shredded mozzarella cheese.  Take 1 cup of the mixed cheeses and mix into all the other ingredients you set aside.  Put into your greased 9 x 13 baking pan.  Sprinkle the remainder 1 cup of cheese on top.  Bake at 375 degrees for about 25 minutes or so, until biscuits are done.  Top with some chopped green onions.

These would also be great to munch on while watching football.  The season is about to start, you know!
