Time for an old fave...
Really it's a combo of two and perfect comfort food for those chilly, rainy days that will eventually turn over to blooming trees, pretty flowers and sunshine.
Our grass has finally turned green and I can see teeny, tiny buds on the trees. The daffodils are up and starting to bloom. We are on a roller coaster of temperatures, but I know that beautiful Spring weather will eventually have the upper hand. But, for those still chilly, rainy days, nothing beats a cup of soup and a nice warm sandwich made of two favorites...BLT and Grilled Cheese!
Really, can you go wrong with crispy bacon and cheese? I didn't think so...
Ingredients per sandwich:
2 slices of sourdough bread
2 slices of cheddar cheese
2-3 slices of cooked bacon
2 slices of tomato
lettuce
2 slices of Swiss cheese
unsalted butter
Directions:
On one slice of bread, layer 2 slices cheddar on top, then bacon slices, tomato, lettuce and finally 2 slices of Swiss cheese. Top with slice of bread. Butter outside of bread slices then place sandwich on your George Foreman Grill. Close lid and let cheese melt and bread toast for about 3-4 minutes.
I am comforted already!
