The days are getting shorter. Have you noticed? Before we know it, it'll be dark around 4 and I'll be ready for bed by 6. Not really, but it isn't too far from the truth. Comfort food is beginning to make an appearance at our table. How about yours? What is your favorite comfort food? Do mashed potatoes make your list? They do mine and on one super busy weekday I came up with a plan involving mashed potatoes. Actually KFC originally came up with this creation but it suited exactly what I needed...
Mashed Potato Chicken Bowl is really more about assembly. It is made with mashed potatoes, baked chicken bites, corn, brown gravy and cheddar cheese. It's totally comfort food in a bowl...besides, not only is it almost fall, but it's almost yoga pant season (aka stretchy pant season).
Let's start with the baked chicken bites. I cut up raw pieces of chicken into bite size chunks. I dip them in an egg/milk mixture and then coat them in Italian Bread crumbs. Bake in a 375 degree oven for 15-18 minutes and they are good to go. While the chicken bites are baking, whip up some box mashed potatoes, boil some corn and heat the brown gravy. Now, just assemble.
A heaping spoonful of mashed potatoes followed by cooked corn, brown gravy and baked chicken bites.
Top with some shredded cheddar cheese and you have an all in one meal! Quick and warm in your belly!
So as the nights get colder and shorter, whip up all the ingredients for making Mashed Potato Chicken Bowl. You know, each family member can customize their own bowl.
