Apple Pie Stuffed French Toast
I love breakfast food but often times our mornings are a crazed-filled haze. Usually a pop tart or a piece of toast is on the menu. I know, I'm a food blogger and can't seem to get it together with breakfast choices on weekday mornings. However, recently I redeemed myself. My family was awakened to the smell of french toast. Not just plain ol' french toast...APPLE PIE STUFFED FRENCH TOAST!!! I'm talking HUGE brownie points that were scored that morning! This recipe is enough for 4 and can be made quickly but looks like something you would have slaved over! Besides, who doesn't like apple pie for breakfast?
Ingredients:
8 slices whole wheat bread
plain cream cheese tub
1 21 oz apple pie filling
cinnamon
3 eggs
1/3 cup vanilla almond milk
powdered sugar
butter
Directions:
Take each slice of whole wheat bread and spread on a thin layer of cream cheese. On one slice, add 1/3 cup apple pie filling and 1/4 tsp cinnamon. Place the other slice of bread on top to form an apple pie sandwich.
Next you need to make the egg wash. Whisk together eggs, almond milk and 1 tsp of cinnamon.
Melt butter on a hot griddle.
Dip each apple pie sandwich in the egg mixture and place on a hot griddle. "Toast" each side for 3-5 minutes. Remove from pan and sprinkle with powdered sugar.
Breakfast meals are awesome especially when it's stuffed with pie!
Celebrate the little things that make life sweet,
Christine
