Have you ever had a lemonade stand?
I bet you have.
I had one and probably charged a dime for a cup.
My girlies had a lemonade stand too, but I think prices shot up! They were selling lemonade for a dollar!
I remember one summer that they sold gallons of lemonade. They cleaned up big time!
Not sure if it was the lemonade or two cute little girls sitting at their home-made lemonade stand...maybe a little bit of both?
Thinking of all that reminded me of a cool and delicious frozen form of lemonade.
Mini Lemonade Stand Pies
Let's get right to it...
Ingredients:
1/3 cup strawberry lemonade powder mix
1/2 cup water
2 cups (1 pint) of vanilla ice cream, softened
1 tub of cool whip
2 packages of mini graham cracker crusts
Stir drink mix and water until dissolved.
Beat lemonade mixture and ice cream in a large bowl with a mixer on low speed. Gently stir in whipped topping until smooth. Spoon into crusts. Freeze for 4 hours or overnight until firm. Let stand for 15 minutes before slicing. Store in freezer any leftovers.
So light and creamy, perfect on a warm day. Forget those lemonade stands...move it up a notch to mini lemonade stand pies...although it may be kind of creepy if you are sitting in front of your house selling them. Maybe not? I'll let you decide, but kiddos selling lemonade is a big seller! So stick them out there with cups of lemonade and mini lemonade stand pies!
