Zucchini Pizza Bites

Zucchini Pizza Bites



Ok, this one is so simple and is so good, I just couldn't pass by without sharing it.
You just pop these babies into your mouth and you will have quite a party going on in there.
You know you have lots of zucchini just waiting to be used.  Either you have a bushel full of zucchini or you have a neighbor (me) that keeps sharing her produce.  In either case, these are a great light lunch or afternoon snack for the kiddos.  All you need to do is slice your zucchini into 1/2 inch slices.  Place them on a baking sheet.  Put 1 tsp of your favorite red pasta sauce on each zucchini.  Sprinkle each with 2 tsp shredded mozzarella and add some pepperoni minis.  Bake in a 375 degree oven for 7-8 minutes or until cheese melts.



The zucchini acts like the crust of these healthy mini pizza bites!
Wouldn't they be great as your kiddos arrive home from school?  How about part of your football watching snacks...you do know football season is beginning, don't you?  :)
They totally taste like little mini pizzas and you will feel so much better about eating them.
