Zucchini and Goat Cheese Bruschetta

I love to spend time in the garden.  At first, it is kind of overwhelming with the constant weeding.  But, before you know it, you start to have a harvest of sorts.  Lettuce and peas comes first, followed by tomatoes and zucchini.  Now with zucchini, it is kind of a love/hate relationship.  Have you ever had that with your veggies?    I know, kind of odd.  Let me explain...you happily plant your zucchini and there are sprouts that grow larger and begin to creep.  Then beautiful yellow flowers appear and before you know it, the zucchini vine has spread all throughout your garden and you have so much, you just can't keep up!  I know, I have seen ways to make the zucchini grow vertical, but I kind of forget, every single year, until it is too late.  So what to do with ALL that zucchini?  Sharing the love with your neighbors is a big one.  Baking zucchini bread, muffins and cupcakes that again you share with your non growing zucchini neighbors and family.  How about something straight from the garden to your table...no shredding needed?





So colorful and so tasty!  Seasonal Simplicity is a passion of mine.  I love it when I can take a fruit or veggie straight from the garden or farmer's market and turn it into something delish!  So with the zucchini, it became
Zucchini and Goat Cheese Bruschetta.



Zucchini and Goat Cheese Bruschetta can be whipped up in a matter of minutes!  
So, it's great as a last minute appetizer to take to a party or when the party is at your house!

All you need are the following:  bruschetta chips, 1 zucchini, 1 8oz goat cheese, sun dried tomatoes that have been chopped and sea salt.

Use a peeler to create ribbons of zucchini and then you are ready to assemble.  On each slice of bruschetta chip (you can find these in the bakery section of your grocery store or make your own), spread on some goat cheese.  Top the goat cheese covered bruschetta chip with ribbons of zucchini and chopped sun dried tomato.  Sprinkle each with some sea salt.  Done!


  
Bite fulls of the season's best!  The toasty bruschetta is great with the tanginess of the sun dried tomato.  Add some goat cheese and fresh ribbons of zucchini and your combo is complete!



See what I mean? You may hate that your zucchini is creeping all over your garden, but look at what you can create!  Yumminess in a bite!  Love it!
