Peanut Butter S'more Cookies

Do you have a peanut butter and chocolate weakness?
When those chocolate peanut butter candies are in your proximity, do you attack the bowl, grabbing and hoarding as much as you can?  Pathetic, huh?  Hmmm...I do have a "slight" chocolate peanut butter addiction, one that I keep in check with the general public, but my family has to guard their supply because some of that yummy goodness seems to always disappear.  Surely they miscounted how much they had?  Right?  But enough of my addiction  love of the combo!  Check out these cookies!!!!



These are peanut butter cookies combined not only with chocolate, but also marshmallows.

And so, the PEANUT BUTTER S'MORE COOKIE is born!

What's to say about these cookies?  The peanut butter cookie is soft and gooey with a center of marshmallow and chocolate.  If you don't want to share with your family, I'd be ok with that.  I kept mine hidden for a little while and enjoyed them all to myself...really, I don't have a problem....

Ingredients:
1/2 cup shortening
3/4 cup creamy peanut butter
1/3 cup sugar
1/3 cup packed brown sugar
1 egg
2 Tbsp milk
1 tsp vanilla
1 1/2 cups flour
1 tsp baking soda
1/2 tsp salt
additional granulated sugar
1/2 cup semi sweet chocolate chips
1 cup mini marshmallows

Directions:
Preheat oven to 375 degrees.
Beat shortening and peanut butter in a large bowl until well blended.  Add sugar and brown sugar.  Beat until fluffy.  Add egg, milk and vanill.  Beat well.

Combine flour, baking soda and salt.  Gradually add to the peanut butter mixture.  Beating until all is blended.

Shape dough into 1 inch balls.  Roll in granulated sugar and place on an ungreased cookie sheet.

Bake 8-10 minutes or until lightly brown.

Remove from oven and depress slightly in the middle.  Add some chocolate chips and a couple of mini marshmallows.  Let sit for 5-7 minutes and remove from cookie sheet to a wire rack to cool.



Grab a tall glass of milk and find a corner to hide....no, really you should share...?
