Strawberry Orange Coconut Muffins

This month can be a complete contradiction.  We all crave comfort foods like hearty soups and stews.
Yet, we want to eat healthier.  To me, one of the first steps to eating healthier is to cook at home.  Believe me, there are days I just want to grab some fast food, but, for the most part, we eat at home.  It's healthier for the wallet and the waistline.
Speaking of healthy, 
how about a muffin made with whole wheat flour for a yummy way to start the day?


Chunks of strawberries and bits of coconut along with orange juice flavor these delicious muffins.


Whole wheat flour and buttermilk keep these muffins waistline friendly.
The coconut even adds a little tropical twist!


Before you head out and about, stop and have Strawberry Orange Coconut Muffins for breakfast.


Ingredients:
3/4 cup white all purpose flour
1 cup whole wheat flour
2 tsp baking powder
1 tsp baking soda
1/2 cup brown sugar
1 cup buttermilk
1/2 cup orange juice
1 tsp vanilla extract
3/4 cup coconut
3/4 cup to 1 cup chunked strawberries
nonstick spray
Directions:
Preheat oven to 375 degrees.  Spray a muffin pan with nonstick spray.  In a large bowl, place white flour, wheat flour, baking powder, baking soda and brown sugar.  Stir until incorporation.  Slowly stir in buttermilk, orange juice and vanilla extract.  Stir just until combined.  Add coconut and strawberries.  Gently stir.  Spoon batter into prepared muffin pan.  Bake for 15-18 minutes until inserting a toothpick comes out clean.  Let sit 5 minutes before removing from muffin pan.  Serve warm.


You will feel soooo good about making something healthy for your family!
Enlist the kiddos to help make these muffins.  I bet they could even help cut the strawberries!
