2 Zucchini Recipes

On Sundays I read the local paper and scour the advertisements for the deal of the century.
I don't seem to find deals of the century, but I can find good deals on butter or something else I probably don't even need.
But you never know, right?
Well, I have a deal for you.  
Head out into your garden and grab a zucchini or two because I have 2 easy zucchini recipes you can make today!  A great deal don't you think?


Zucchini Cornbread is full of shredded cheddar cheese and zucchini.  So moist and a perfect addition to your dinner plans.  Served warm with a pat of butter...yum, yum!

 Summer Zucchini Slaw is made with your spiralizer!  Zucchini noddles, carrots, green peppers and grape tomatoes round out this refreshing salad.  I am thinking this is a Labor Day must!
Let's start with the easy Zucchini Cornbread recipe.



Ingredients:
1 tsp salt
1 1/4 cup flour
3/4 cup cornmeal
1/4 cup sugar
2 tsp baking powder
1 egg, beaten
1/4 cup vegetable oil
1 cup milk
1 Tbsp fresh thyme
1 cup cheddar cheese, shredded
1 cup zucchini, shredded
nonstick spray
Directions:
Preheat oven to 350 degrees.  Spray a square baking pan with nonstick spray.  In a large bowl, mix together salt, flour, cornmeal, sugar and baking powder.  Stir in beaten egg, vegetable oil and milk.  Add fresh thyme, shredded cheddar cheese and shredded zucchini.  Spoon mixture into prepared pan.  Bake at 350 degrees for 45 minutes.  Serve warm with butter.

And now for the Zucchini Slaw...



Ingredients:
1 medium zucchini, spiralized on julienned
1 cup carrots, julienned
1 cup green pepper, julienned
1 cup grape tomatoes
1/3 cup mayo with olive oil
1 tsp salt
1 tsp fresh ground pepper
1 tsp white wine vinegar
Directions:
Place all the veggies in a large bowl.  In a small bowl, mix together mayo, salt, pepper and white wine vinegar.  Spoon the mayo mixture over the veggies.  Toss gently.  Refrigerate for 1 hour before serving.

Both of these zucchini recipes are just perfect for Labor Day!
Sounds like a deal of the century!  Ok, probably not.  But a deal of the weekend?  You betcha!
