Peach Danish

We are still getting such wonderful, fresh peaches up here in the Midwest, so I wanted to take advantage of that.  I always love a good danish and can't find a really fresh bakery around town. Lots of bakeries in Chicago, but too far to go for my morning breakfast.  So with fresh peaches and a lack of local bakeries, I looked for a solution.  I found it in a grocery store magazine in Iowa while moving my college daughter back to school.  It's a decadent pastry like one would find in Paris.



Peach Danishes have fresh sliced peaches sitting on a layer of sweet cream cheese that tops a flaky pastry.  Again, using puff pastry and by now you should have it ALWAYS in your freezer!

Less than 10 ingredients, so even sweeter!

Ingredients:
1 package of frozen puff pastry, thawed
4 ounces plain cream cheese
2 Tbsp granulated sugar
1/4 tsp vanilla extract
1 tsp lemon juice
1 peach halved and sliced thinly
1 egg
1/2 Tbsp water
powdered sugar for dusting
Directions:
Preheat oven to 400 degrees.  Line baking sheet with parchment paper.  On a lightly floured surface, unfold puff pastry sheet.  Use a glass (approximately 3 inches wide) to cut 10-12 circles.  Place circles on prepared baking sheet.  In a bowl, mix cream cheese and sugar.  Add vanilla and lemon juice.  Mix until well combined.  Spread about 1/2 Tbsp of cream cheese mixture onto each puff pastry circle.  Place sliced peaches on top.  In a small bowl, whisk together egg and water. 
Brush over the edges of each pastry.  Bake for 15-20 minutes or until puff pastry is golden.  Remove from oven and dust with powdered sugar.  Serve.  Store any leftovers in the freezer.




Forget about the bakery when your kitchen can produce some of these!

Just a few simple ingredients and 30 minutes from prep through baking.  Hmmm...I think you could even make these during the week, don't you?  Just defrost the puff pastry in your refrigerator over night.  The rest can be done in the morning while your coffee is brewing.
